Production Details Hand harvested and sorted in the vineyard and on a sorting table. The grapes were lightly crushed and destemmed, then placed whole in stainless-steel tanks; a small whole-bunch portion could be incorporated depending on fruit condition. Cold maceration lasted a few days, followed by temperature-controlled natural-yeast fermentation with pumpovers and/or punchdowns. After pneumatic pressing, maturation took place in barrels, about 30% new wood, for 10 months with malolactic fermentation. The barrels were blended in vats one month before bottling; the wine was not fined, received light lenticular filtration, and was bottled according to the lunar calendar.
