Production Details Small-production wine from selected terroirs; the sheet contextualizes yields as less than 32 hL/ha normally and 27 hL/ha “currently.” The dedicated high-altitude parcel was picked early in the morning for cool fruit. Vinification at 20–21°C and maturation took place in the same 100% stoneware vessel. The wine was conceived for release after two years, in its second spring. The producer's December 2024 guidance recommends light decanting on ice and serving at 15 or even 16°C.
Tasting Notes Deep, delicately iridescent saffron-toned colour; small red berries and bilberries; black tea, sage, garrigue, fresh herbs and mint; fine, ample and savoury, with persistent texture and a long sapid finish.
Food Pairing Poultry, veal, pork, autumn thrush, duckling, red or white offal, foie gras, red mullet, saffron, spiny lobster and anchovies.

2020 Technical Specifications

Grape Varieties 95% Mourvèdre
Classification AOC Bandol
Region Bandol
Fermentation Vessels Partly a 30 hL Franz Stockinger foudre and partly stoneware jars
Indigenous Yeast Yes
Barrel Size 30
Bottling Date mid-June 2021
Production Details A dedicated high-altitude, late-ripening parcel was harvested on a Mistral day, early in the morning for cool fruit. Separate portions were vinified and matured in a minimally marking 30 hL Franz Stockinger foudre and in minimally porous, neutral stoneware jars. Indigenous-yeast vinification ran at 20–21°C. The sheet contextualizes the yield as below 32 hL/ha and describes release after approximately one and a half years, in the second spring. January 2022 guidance recommends light decanting on ice and serving at 14–15°C.
Tasting Notes Deep, delicately iridescent colour; red fruit, Morello cherry and redcurrant, refreshed by citrus, grass and mint; fine, full-bodied and savoury, with a youthful sapid finish.
Food Pairing White meats, autumn thrush, partridge, red mullet, saffron and spiny lobster.

2019 Technical Specifications

Grape Varieties 95% Mourvèdre
Classification AOC Bandol
Region Bandol
Indigenous Yeast Yes
Bottling Date mid-June 2020
Production Details The wine came from a dedicated high-altitude parcel harvested late, on a Mistral day and early in the morning. A producer-source conflict remains for vinification temperature: the official 2019 PDF states 20–21°C, while the official portfolio's 2019 section states 21–23°C. Both sources support indigenous or natural yeast and late bottling in mid-June 2020; the portfolio says the wine became available during 2022.
Tasting Notes Gently iridescent, deep colour; subtle vegetal notes, red berries, liquorice and saffron-like spice; broad, full-bodied, crisp and powerful, with a sapid, very long finish.
Food Pairing White meats, autumn thrush, partridge, red mullet, saffron and lobster.

2018 Technical Specifications

Grape Varieties 95% Mourvèdre
Classification AOC Bandol
Region Bandol
Fermentation Vessels Partly a 30 hL Franz Stockinger large oak cask and partly stoneware jars
Natural Yeast Yes
Barrel Size 30
Bottling Date mid-June 2019
Production Details The producer describes partial maturation in a neutral-toast 30 hL Franz Stockinger large oak cask, which supplies oxygen, and partial maturation in porous, neutral stoneware, which supplies tension and purity. Natural-yeast vinification ran at 21–23°C. The archive contextualizes yields as below 35 hL/ha and records availability from the beginning of October 2021.
Tasting Notes Delicately iridescent and subtle colour; restrained greenery and red fruit developing toward liquorice and spices; broad, ample, crisp and powerful, with exceptional sapid length.
Food Pairing White meats, autumn thrush, partridge, red mullet, saffron and crayfish.
