Production Details Fruit comes from 1 ha planted at 10,000 vines/ha and is harvested manually. Low-temperature alcoholic fermentation lasts several weeks or even months. Maturation is approximately 10 months on lees, without racking, in stainless steel; recommended serving temperature is 10–12°C. The same page separately lists French oak under “barrel type,” conflicting with its explicit stainless-steel fermentation and maturation descriptions, so no oak-use claim is proposed.
Tasting Notes Straw yellow; fruity aromas led by apple; broad, silky and balanced palate with a light-bodied finish.
Food Pairing Salty or spicy dishes, richer preparations, charcuterie, fried fish, andouillette, seafood, and salty or dry cheeses such as goat cheese.
