Production Details The vines are single-Guyot trained, were planted in 1959 at Chorey-lès-Beaune, and are harvested manually. Production comprises a cold pre-fermentation stage, settling, spontaneous fermentation, and 10 months in stainless-steel tanks. The vineyard is certified Haute Valeur Environnementale level 3 (2022), and the recommended serving range is 9–10°C. The page contains an unresolved analytical conflict in duplicated specification blocks: residual sugar is shown once as <0.2 g/L and once as <0.1 g/L; neither bound is treated as an exact residual_sugar_gl value.
Tasting Notes Pale, lightly golden yellow; fresh white-fleshed fruit and light lemon aromas; fresh and lively palate with saline, iodine and fruit-acid notes and a long finish.
Food Pairing Aperitif or gougères; kir; snails; seafood platters; charcuterie; fresh goat cheeses.
