Production Details Trade-source release descriptions identify a rosé made on the Fût de Chêne MV base with red wine from old Pinot Noir in Aÿ; Plus de Bulles specifies a 2005 red wine. Champagnen.se states that part of the blend ferments for 10 days at 13–18°C in small new Argonne-oak barrels, completes natural malolactic fermentation in barrel, matures on full lees for one year in 228 L Argonne barrels with 20% new oak, is blended with new wine and aged for a further 12 months in a solera of small oak barrels, and then spends a further six years in bottle before disgorgement. A Robert Parker-reviewed bottle reproduced on that page was disgorged in February 2023; this bottle-specific date is not generalized as the cuvée's disgorgement date.
Tasting Notes Partridge-eye to copper colour; red fruit, tangerine, spice and smoked-meat notes; chalky, saline palate with fine bitters
Food Pairing Spicy oriental dishes or mature charcuterie; may also accompany an entire meal
