Production Details The domaine described an approach unchanged for ten years: manual harvest, crushing and pressing without sulfur, 24-hour settling while retaining most lees, fermentation beginning before transfer to barrel, about 10% new barrels across the cellar, occasional bâtonnage, and 12 months of maturation without racking before assembly the following spring. The 2018 Au Paupillot yielded only enough wine for one barrel and was bottled exclusively in magnum.
