Production Details Biodynamically cultivated, exceptionally healthy bunches were selected before harvest and picked by hand, then laid carefully on racks in a sufficiently ventilated attic to dehydrate and concentrate. Drying lasted between 2 and 5 months. Approximately 6 kg of grapes were required for 1 L of must; the resulting must contained approximately 360 g/L sugar. Natural-yeast fermentation in oak barrels lasted a little over two years, followed by three years of maturation in 228 L pièces. The producer recommends serving at 12–14°C and notes that aeration suits the wine.
