Production Details Fruit is sourced from a variety of top-quality orchards. After crushing, fermentation is temperature-controlled at 71–77°F, followed by distillation in copper alembics at a minimum temperature of 140°F using steam-heated stills. Distillation is a single continuous process; the initial heads and final tails are eliminated and only the heart is retained. The documented U.S. release is 375 mL and lists Pierre Trimbach as winemaker.
Tasting Notes Pure and clear, with fresh-cherry aromas, hints of baking spices, crisp and clean cherry-fruit flavors, and a long finish.
