After fermentation, the skins were gently pressed and blended with the free-run juice; maturation and malolactic fermentation took place in a small century-old wooden foudre, with very little added sulfur and light filtration. The technical sheet also reports total acidity of 3.28 g/L without specifying its analytical basis, so that figure is not normalized as total_acidity_gl. Bottling timing is withheld because the official page says April while the linked sheet says June 2024.
