Production Details 100% hand-harvested. Pressed whole-cluster for approximately 6 hours in pneumatic presses. Natural settling. Spontaneous fermentation with indigenous yeasts in century-old oak foudres (large barrels). Aged on fine lees for several months. Gentle filtration before bottling. Sulfur may be adjusted at bottling if necessary. Natural stabilisation and clarification over winter before bottling in late spring. Certified biodynamic since 2004, certified by Ecocert and Biodyvin.
