Production Details Overripe Pinot Gris berries were picked individually, with cuvée S representing a stricter selection of berries completely shrivelled by noble rot. After pressing, the must settled for a few hours and fermented at 18–24°C in temperature-controlled barrels or vats. The wine was racked once, clarified naturally over winter, lightly filtered the following spring immediately before bottling, and then aged extensively in bottle in the producer's cellars before release.

Tasting Notes Deep amber-gold; fresh pineapple, brioche, vanilla, acacia honey, candied apricot and delicate botrytis notes; rich, silky and balanced by fine natural acidity
