Production Details Grapes were harvested exclusively by hand from approximately twelve favoured localities in and around Riquewihr. After pressing, the must was settled for a few hours and fermented at 18–24°C in temperature-controlled vats. The wine was racked once, clarified naturally during winter, lightly filtered the following spring before bottling, and bottle-aged in the producer's cellars until release.
