Production Details The producer reports residual sugar as less than 0.3 g/L, a bound rather than an exact 0.3 g/L. Fruit was harvested exclusively by hand; grapes were destemmed into the presses and macerated until the next morning. The must was settled for a few hours, fermented at 18–24°C in temperature-controlled vats, racked once, clarified naturally over winter, lightly filtered before spring bottling, and bottle-aged in the producer's cellars until release.
Tartaric Acid 5.25 g/L
Tasting Notes Youthful, crystalline and refreshing; expressive but restrained fruit, with a dry, full-bodied, fresh and thirst-quenching palate and a subtle Muscat-grape finish.
Food Pairing Apéritifs; goat and sheep cheeses; asparagus; marinated herring and mackerel; smoked fish; crustaceans; spicy or strongly flavoured dishes
