Production Details Partly sourced from two young estate plots, including one on Schoenenbourg planted with Muscat d'Alsace. Grapes were harvested exclusively by hand, destemmed into the presses and macerated until the following morning. The must was settled for a few hours, fermented at 18–24°C in temperature-controlled vats, racked once, clarified naturally over winter, lightly filtered before bottling the following spring, and bottle-aged in the producer's cellars until release.
