Production Details Hand harvested, with sorting in the vineyard and on a sorting table. After light crushing and destemming, the berries entered stainless-steel vats; a small whole-cluster portion was optional depending on fruit condition. Cold maceration lasted a few days before temperature-controlled fermentation with pumpovers and/or punch-downs. The wine matured for 14 months in barrels, approximately 30% new wood, and the barrels were blended in tank one month before bottling. Light lenticular filtration preceded bottling, which followed the lunar calendar.
