Production Details For the estate's 2012 wines, yields were down 30–50%, mostly because of poor flowering, with the oldest vines most affected. Chevillon used a gentler extraction approach; all wines had been racked once after malolactic fermentation and were in barrel when tasted. The yield reduction is estate-wide context, not a Les Bousselots vineyard yield.
Tasting Notes John Gilman described red and black cherries, gamebird, nutskin, woodsmoke, cocoa, mineral soil and vanilla oak, with a deep, precise, sappy palate and long tannic finish. Antonio Galloni described darker fruit, generous breadth, spice, menthol and pine, with balanced but burly and sauvage character.
