Alcohol 12.4%
pH 3.09
Grape Varieties 100% Listán Blanco
Region Valle de la Orotava
Harvest Dates Mid-August to mid-September 2024
Fermentation Vessels 20–45 hL foudres and 5 hL barrels
Production Details Fruit came from western Valle de La Orotava sites planted to 60–150-year-old vines trained in the traditional cordón trenzado system. Malolactic fermentation was partial in foudres and barrels, followed by 10 months of maturation in 20–45 hL foudres and 5 hL barrels. The producer lists total acidity as 6.67 but supplies neither a unit nor an acid-equivalent basis, so it is not proposed as a canonical total_acidity_gl value.

Production Details The Copito sheet describes predominantly destemmed fruit from multiple 10–150-year-old vineyards, mostly trained cordón trenzado, spontaneous fermentation in large wood, partial malolactic fermentation in barrel, and 10 months' maturation in 20–45 hL foudres. It lists acidity as 6.17 g/L without identifying the acid-equivalent basis and recommends serving at 6–8°C; both are retained here as qualified text rather than forced into single-value canonical analytical or serving-temperature fields.
Tasting Notes Ripe pineapple, peach, citrus, white flowers and a mineral undertone; concentrated and dense with refreshing acidity and integrated wood
Food Pairing Pasta dishes, seafood, fried fish, vegetarian cuisine and mushrooms

Production Details Listán Blanco and Pedro Ximénez came from north-facing, centenary cordón-trenzado vines in El Esquilón; the other local varieties came from elsewhere in Valle de La Orotava. Fermentation lasted approximately three weeks with lees contact. Maturation lasted nine months: 20% in concrete and 80% across 500 L oak barrels and 4,500 L foudres. The source gives an elevation range of 300–650 m and a serving range of 9–12°C; these ranges are retained as qualified text.
