Production Details The grapes were harvested manually and sorted on a selection table. Free-run must was drawn off by bleeding while the tanks were being filled, then fermented over fine lees in second-use French oak barrels. The wine remained in those barrels for 15 months and rested in bottle for 8 months before release. Stabilization and clarification were performed by natural methods.
Tasting Notes Bright salmon-pink color. Delicate and complex aromas of fresh fruit, wildflowers, apricot, cherry, vineyard peach, fennel, bitter-almond blossom and limestone minerality, with subtle tertiary oak notes. The palate is full and simultaneously rich and fresh, showing grapefruit, cherry, peach and floral notes, followed by a very long, fresh finish.
Food Pairing Gastronomic rosé suitable for accompanying an entire meal
