Production Details Bunches were hand-selected and taken directly to the winery in small boxes; whole clusters were destemmed and crushed, then spontaneously fermented with indigenous yeasts in stainless-steel tanks and old open-top foudres. The wine matured for 21 months in foudres and barrels of various sizes, was clarified with gelatin and bottled unfiltered, then spent five years in bottle in the Remelluri cellar before market release. The south-facing vineyards lie at 590–805 m; farming is regenerative, ENEEK-certified organic and practicing biodynamic.
