Production Details Pago Capellanía was planted in 1945. The producer recommends at least 30 minutes of oxygenation before service. A reproduced August 2016 Wine Advocate assessment reports “6.75 grams of acidity (tartaric),” but does not provide a per-volume unit or sufficiently explicit analytical basis, so this observation is not represented as total_acidity_gl or tartaric_acid_gl.
Tasting Notes Initially subtle nose opening to mushrooms and verbena tea; powerful and elegant palate with pronounced acidity, length, volume and clarity, mineral notes and an umami finish
Food Pairing Charcoal-roasted woodcock with black truffle, foie and old brandy; steamed spider-crab meat with fresh pasta; stuffed and caramelized Iberian pig’s trotters with mushrooms and white truffle; steamed hake kokotxa with pil-pil and Iberian acorn-fed ham ravioli
