Production Details Dry white pomace spirit made from carefully selected Albariño pomace after vinification. It undergoes very slow double distillation over direct heat in six artisanal copper stills; the heads and tails are discarded and only the heart is retained. The spirit then rests for several months to reach balance. The producer recommends serving it at 0–5 °C.
Tasting Notes Crystalline appearance; powerful nose with balsamic and candied-fruit aromas; strong yet softened by glycerine and other higher alcohols, with sweetness, fleshy texture, length, finesse and aromatic intensity.
Food Pairing Recommended in small sips as an after-dinner drink.
