Production Details Carefully selected Albariño pomace is distilled slowly twice in six handcrafted copper pot stills over direct fire; the heads and tails are discarded and only the heart is retained. The fresh white spirit macerates for one month with nine aromatic herbs from O Rosal, then ages for one year in barrels. Presentation is 70 cl, and the recommended serving range is 0–5 °C.
Tasting Notes Bright golden colour; expressive aromas of ripe fruit, mountain herbs, flowers, dried herbs and nuts; balanced, elegant, long, balsamic and savoury palate, with finesse and an expressive character.
Food Pairing After-dinner drink, served in small sips.
