Production Details Whole clusters arrive in 10 kg crates and go directly into a filled, sealed vessel. Fermentation starts spontaneously without added yeast or additives at 20–28°C; after the first fermentation the fruit is pressed, followed by a second fermentation driven by remaining sugar. The wine matures for 20 months in Stockinger foudres and is bottled in a reductive state with some retained gas.
