Production Details The 7.92-hectare source comprises steep, terraced estate parcels at 300–430 metres, with vines aged 24–80 years. The vineyard was registered for ecological viticulture, trained as bush vines/gobelet, cultivated by crawler tractor and mules, without irrigation or green harvesting. Grapes were hand harvested with strict selection; both whole bunches and destemmed fruit were used. Alcoholic fermentation employed regular pigeage, followed by spontaneous malolactic fermentation in wooden barrels and 14 months in French-oak foudres and bocoyes. The wine was neither fined, filtered nor cold stabilized. The analysis additionally reports volatile acidity of 0.55 g/L and total dry extract of 29.7 g/L.
