Production Details Organic and regenerative white wine. Alcoholic fermentation lasted 2 weeks: 50% in stainless steel at 14°C and 50% in barrels at 16°C. The barrel-fermented half matured in barrel for 6 months. The sheet describes 50% new oak and identifies American and French oak, but its printed 50% species-mix wording does not fully allocate both oak species.
