Production Details The Crianza 2009 is a 75 cl release. Before pressing, the grapes were frozen using liquid nitrogen in a prototype supplied by two freezer chambers operating at -15°C. The must fermented in stainless steel for two and a half months, with the prolonged fermentation attributed to its high sugar concentration. The wine then matured in the producer’s bottle cellar for at least ten years before market release. The producer describes the viticulture as organic and biodynamic, with spontaneous ground cover, plant infusions and decoctions, estate-made animal and plant compost, and no chemical herbicides or pesticides.
Tasting Notes Yellow with golden highlights; expressive and deep aromas of citrus, lychee, guava, mango, loquat and apricot, with orange blossom and rose water; floral palate developing candied-fruit, mineral and hydrocarbon notes while retaining lively acidity.
Food Pairing Fruit- through chocolate-based desserts; foie; cheeses, especially soft cheeses.
