Production Details Mas Escorpí was cultivated from 1984 using organic and biodynamic viticulture, spontaneous ground cover, and no chemical herbicides or pesticides. Grapes were left to over-ripen and shrivel on the vine; at harvest they measured 24 degrees potential alcohol, which is a grape measurement rather than finished-wine alcohol. Two-thirds were hand-harvested in 20 kg boxes and held for 36 hours in a cryogenic chamber to reach 0°C. After berry-by-berry destemming and sorting, they underwent a 10-day pre-fermentation maceration at 5°C in a wooden vat, with punch-downs every 12 hours. The must was removed when fermentation began; the remaining one-third of over-ripened, shrivelled Pinot Noir was harvested that day and added to the must fermenting at 13°C. Fermentation lasted almost six weeks and stopped naturally. The wine was subsequently aged for seven months in French-oak barrels.
Tasting Notes Cherry-coloured; floral and full of character, with red-berry and Mediterranean-herb notes; fruity body, smooth tannins, a silky and enveloping palate, and fresh acidity.
Food Pairing Red-fruit pastries; chocolate desserts such as catanias, brownie or chocolate coulant with red-berry coulis; medium-strength, strong and blue cheeses.
