Production Details Selected rows in Les Solanes and Mas Escorpí were left to over-ripen, with the vines protected by veils. The grapes were harvested late and by hand, then sorted berry by berry for complete dehydration. Fermentation proceeded at 18°C for 50 days and stopped naturally because of the grapes’ residual sugars. The wine was subsequently transferred to cork-stoppered 6 L Matusalem bottles for an unspecified period of evolution in a cave beneath the vineyards.
Tasting Notes Very bright deep-gold appearance; deep and intense aromas of stone fruit, apricot, peach and quince, with floral, chamomile, balsamic-herbal and honey notes; full, silky and medium-bodied, with abundant fruit and a fresh, long finish.
Food Pairing Stone-fruit or tropical-fruit desserts, meringues, caramel, and medium-strength soft cheeses.
