Production Details Hand-harvested fruit was received by gravity through a sorting table, chilled to 0–5°C, and the must was meticulously fractioned. The barrel-fermented portion was intended to provide light oxidative mineralization rather than oak or toast flavours. The wine spent 3 months in contact with its yeasts and at least 6 months in bottle before release.

Tasting Notes Bright yellow with a coppery rim; fragrant, with wild strawberry, vineyard peach, quince, baked apple, dill, liquorice, violet and smoke; broad, viscous and vinous, with sustained acidity, refreshing bitterness and a persistent finish.
