Gentle traditional punch-downs were performed over two weeks. Only free-run wine was used after fermentation. Spontaneous malolactic fermentation and lees aging took place in fine-grained, medium-toast 300 L French Allier barrels. Production Details Mas Escorpí vineyard production was approximately 2,500–3,000 kg/ha. Estate grapes were collected in 25 kg crates and sorted again. Pre-fermentation took place at 12°C; fermentation and maceration occurred in 3,000 L foudres, with traditional punch-downs over two weeks. After devatting, spontaneous malolactic fermentation occurred in fine-grained, medium-toast 300 L French Allier barrels. The wine remained on fine lees until its first spring racking, spent eight months in barrel with 33% new oak, and then at least one year in bottle before release.
