Production Details Grapes were harvested manually, sorted on a selection table, received by gravity and pressed as whole bunches. The wine matured on its lees in magnum for more than 96 months under cork. Production was entirely artisanal, using pupitres with manual riddling and manual disgorgement. Its expedition liqueur came from Gramona’s century-old solera. The sheet also describes organic and biodynamic vineyard practices: no chemical herbicides or pesticides, maintenance of spontaneous ground cover, plant infusions and decoctions, estate-made biodynamic preparations, and animal-and-vegetable compost.
Tasting Notes Brilliant, vibrant straw yellow with old-gold reflections; very intense compote-fruit and deep floral aromas, freshly baked bread, citrus and toffee; broad palate with velvety creaminess and fine bubbles that expand across the palate.
Food Pairing Recommended for a very special celebration or as a companion throughout an evening.
