Production Details Current 50 cL non-vintage Almacenista bottling, designated 1/80: the solera comprises 80 casks aged at Manuel Cuevas Jurado's bodegas on Calle Trabajadero in Sanlúcar de Barrameda, with an average age of 7 years; Million Trading describes the seven years as ageing under flor. The producer sheet reports density 0.9825, volatile acidity 0.24, total acidity 4.29 and residual sugar 1, but prints no units or acid bases for those figures. Moestue instead reports acidity of 4.0 g/L; because that conflicts with the producer's 4.29 and neither source specifies the acid basis, no canonical total-acidity claim is proposed. Recommended service is 7–9°C (44–48°F).
Tasting Notes Pale straw colour; aromatic green apple and sea-breeze notes; dry, fresh and light, with good body and refreshing acidity.
Food Pairing Aperitif; tapas such as almonds and olives; fresh seafood, oysters and white fish.
