Production Details After picking, the Pedro Ximénez grapes are laid in the sun until practically raisined. Fermentation begins slowly and is halted to retain the natural sugars; Skurnik specifies gentle pressing followed by fortification with neutral grape spirit. The wine matures oxidatively/in contact with air in Jerez de la Frontera and has an average age of 12 years. A specialist technical listing identifies American-oak botas, volatile acidity of 0.6 g/L and density of 1149 with no density unit stated. The producer recommends serving at 10–12°C (50–54°F).
Tasting Notes Ebony-colored with iodine highlights; aromas of figs, raisins and dates; enormously sweet, velvety and soft, balanced, with a very long finish.
Food Pairing Rich desserts, cakes and pastries, vanilla ice cream, and strong blue cheeses; also suggested as a digestive.
