Production Details Non-vintage 50 cl Amontillado from a Solera of 21 casks kept at Manuel Cuevas Jurado's Calle Trabajadero bodegas in Sanlúcar de Barrameda. The producer gives an average age of 12 years with the unexplained notation “7+5”; it should not be interpreted as separately identified ageing phases. The producer sheet also lists density 0.984, volatile acidity 0.5 and total acidity 5.55 without units or acid-equivalent basis. A specialist vendor reports total acidity as 5.55 g/L but likewise does not state the acid-equivalent basis, so no unqualified canonical total-acidity value is proposed. Recommended service is 13–14°C (55–57°F).
Tasting Notes Old gold; pungent and aromatic, with a coastal sea-breeze character, hazelnut, light acidity, finesse and elegance, followed by a long dry finish.
Food Pairing Tapas, consommés, foie gras, cured meats, matured cheeses, artichokes and spicy oriental dishes.
