Production Details Dry, non-vintage Amontillado from an exclusive 38-cask solera, aged at the Castle of San Marcos in El Puerto de Santa María, with an average age of 18 years. Lustau describes an inverted solera arrangement: the second criadera is at ground level, the first criadera is above it, and the oldest solera casks are at the top. The technical sheet prints the average age as “18 years /4+14/” but does not label the two components in its extracted text. Serve at 13–14°C (55–57°F). The sheet also reports density 0.9817, volatile acidity 0.66, total acidity 6.52 and residual sugar 5.5 without displaying units or the total-acidity basis in the accessible text; these values are therefore retained contextually rather than mapped to canonical acidity or residual-sugar fields.
Tasting Notes Bright amber with copper reflections; hazelnut praline, candied orange zest, furniture polish and smoked wood; dry, pungent and flavoursome, with refreshing acidity, nutty and salty-spiced notes, and an extremely long finish.
Food Pairing Serve as an aperitif or with consommés, foie gras, cold or smoked meats, a cheeseboard, or spicy Asian cuisine.
