Production Details Non-vintage dry Palo Cortado selected from seven solera casks, with an average age of more than 30 years; the current sheet specifies a 500 mL bottle and recommends serving at 13–14°C (55–57°F). The current Spanish producer page says it is bottled unfiltered directly from the cask. An older Spanish producer sheet documents a 924-bottle release and tabulates density 0.987, volatile acidity 0.72, total acidity 8.6 and residual sugar 7, but gives no units or acidity basis for those analytical figures, so they are retained only as historical release context.
Tasting Notes Coppery topaz color; pecan, fresh fruit and saline aromas; candied fruit, spice, toffee and citrus on the palate; slightly bitter, with dark chocolate, walnut and a long finish.
