Production Details Vintage sparkling wine made by the traditional method. The grapes were picked early; spontaneous primary fermentation in tonneaux was followed by bottle fermentation and seven years on the lees. The bottles were traditionally hand-riddled, the lees removed, and the wine finished with minimal dosage.
Certifications DE-ÖKO-006
Tasting Notes Bright yellow with a silver rim and a fine, persistent bead; aromas of sourdough crust, warm brioche, green almond, hazelnut shell, red-apple peel, dried fruit, cherry blossom, grapefruit zest and smoke. Focused and taut on the palate, with ripe acidity, fine phenolics, noble bitterness, rich extract and a chalky mineral finish.
