Production Details The organic 2021 fruit came from Kallstadt. Vineyard work included buckwheat, clover and radish cover crops, horse-manure fertilization, manual removal of double shoots and shoot thinning for bunch ventilation. The wine fermented spontaneously and the base wine matured without sulfur in tonneau; tirage was in August 2022, followed by 44 months on lees in bottle and disgorgement without dosage but with a minimal sulfur addition. The analysis also lists “S: 8.9 g/L,” but does not define S or the acid-equivalent basis, so this is not proposed as unqualified total acidity.
