Production Details Estate-grown grapes were hand-harvested, sorted a second time and destemmed at the winery. After a short maceration, the crushed must fermented with wild yeasts, followed by maturation in new and reused French barriques and bottling without fining or filtration. The producer notes that some whole clusters are added in warm years but does not establish whether that conditional practice applied in 2024. Vineyard work includes buckwheat, radish and clover cover crops, natural fertilization with horse manure, selective leaf removal and low yields.
