Production Details Vineyard work uses buckwheat, clover and radish cover crops, horse manure as natural fertilizer, manual removal of double shoots and leaf thinning. The grapes are hand harvested and whole-cluster pressed, fermented with natural yeasts without preclarification, kept on the lees until August, sulfur-added late, and made without fining or other processing aids.
