Production Details Whole grapes were gently pressed and fermented spontaneously with natural yeasts in small, seasoned oak barrels; the base wine remained in those barrels for ten months before filtration and tirage. Traditional second fermentation occurred in bottle. The current producer release states more than 111 months on lees and recommends serving at 8–10°C. A Parker-reviewed bottle/release tasted in February 2025 was reported as disgorged in June 2024 after 111 months sur lattes; that disgorgement date is bottle/release-specific and is not generalized to the entire vintage.
Tasting Notes Freshly roasted hazelnuts, harmonious lees aromas, defined body and a finely spicy finish; balanced maturity and freshness.
Food Pairing Fine fish dishes, substantial veal or poultry preparations, and complex Asian cuisine.
