Pinard de Picard reports repeated selective hand harvesting of healthy, fully ripe fruit from steep, barren sites, stainless-steel fermentation without wood, and fine-lees aging. Its narrative says spontaneous fermentation, but its structured specification instead says cultured yeast; the yeast regime is therefore unresolved.
