Production Details Matured in wood for 11 months. The vineyard was cultivated using near-natural practices with yield reduction and a late selective hand harvest. The wine was spontaneously fermented, matured for an extended period and handled artisanally without fining agents; the narrative says picking was delayed until well into November.
