Production Details Traditionally hand-riddled. The official sparkling sheet specifies 78 months of yeast contact, while the current producer page markets '7 years yeast aging' and also says more than seven years before disgorgement; these producer duration statements do not agree and are retained without conversion to days. The producer describes maturation in dark vaulted cellars at 8–10°C. Trade records show separate releases disgorged in October 2024 and August 2025, so neither date is generalized to the entire vintage. Vinovit recommends serving at 8–10°C.
Tasting Notes Fine persistent mousse; citrus zest, green apple, white flowers, smoky slate, fresh herbs, brioche, flint and wet slate; taut, energetic and creamy, with ripe fruit, saline mineral character and a long, cool, spicy finish.
Food Pairing Oysters, sushi, fried fish, poultry, and aged mountain cheese.
