Production Details Careful vineyard work and strict harvest selection produced healthy, fully ripe fruit. The grapes were almost completely destemmed, followed by a four-to-six-week maceration fermentation with natural yeasts, gentle basket pressing and maturation for 18–24 months in classic French barriques. The wine was estate bottled.
Tasting Notes Dark forest berries, crushed slate and quartzite, flint and iodine; silky and very juicy, with crystalline saline acidity and ripe, fine tannins.
Food Pairing Entre-côte with strong truffle jus, green beans and parsley potatoes; glazed duck breast with shallot jus; when mature, braised meat dishes. Decant and serve from a large glass.
