Production Details The grapes were harvested in October from 100% healthy fruit, gently crushed and left on the skins for several hours. The must underwent slow, cool spontaneous fermentation. After fermentation, the wine was carefully matured partly in stainless steel and partly in large wooden barrels, with extended fine-lees contact.
