Production Details The approximately 63-hectare Ockfener Bockstein is described as a steep Saar site. One hundred percent healthy fruit was gently crushed and macerated on the skins for several hours. The must fermented slowly and cool through spontaneous fermentation, followed by gentle maturation in a large wooden cask with a long, unspecified period on the lees.
Tasting Notes Producer site description: powerful and full-bodied, with fine spice, yellow fruit and minerality
Food Pairing Light meats; chicken-breast saltimbocca with tomato-basil sauce and courgette; cod in creamed spinach; sea bream with fennel; paella; ratatouille. The producer also recommends decanting and using a large glass.
