Production Details The grapes were rigorously selected by hand at the end of October, yielding entirely healthy fruit. They were gently crushed, macerated on the skins for several hours, and the must fermented slowly and spontaneously at cool temperatures. Gentle maturation in a large wooden cask and a long period on the lees followed fermentation. The producer recommends serving at 10–12°C, decanting, and using a large glass.
