Production Details The grapes were rigorously hand-selected at the end of October, yielding entirely healthy fruit. They were gently crushed and macerated on the aroma- and mineral-rich skins for several hours. The must then fermented slowly and cool through spontaneous fermentation. After fermentation, the wine was gently matured in a concrete egg and kept on its lees for a long period; the page also describes the vessel as a 1,000-liter concrete egg. Recommended serving temperature is 10–12 °C, and the producer recommends decanting and serving from a large glass.
Tasting Notes Stephan Reinhardt, Wine Advocate, May 2023: pure, fresh and highly elegant; bright fruit and crushed slate; full-bodied, intense and saline; dense yet subtle and precise; long, complex saline finish; fine phenolic structure; taut, linear acidity; crystalline and ageworthy.
Food Pairing Cooked lobster; grilled king prawns; turbot with beurre blanc; truffled poularde; mature hard cheese; smoked eel
