Production Details The grapes were rigorously selected by hand at the end of October, yielding 100% healthy fruit. They were gently crushed and macerated on the aroma- and mineral-rich skins for several hours. The must fermented slowly and cool by spontaneous fermentation, followed by gentle maturation in a clay amphora and long lees aging. The producer recommends serving at 10–12°C.
Food Pairing Boiled lobster; grilled giant prawns; mature examples with turbot in beurre blanc, truffled poularde, mature hard cheese, or smoked eel; decant and serve in a large glass.
